Pizza!

A rainy day calls for yummy pizza!!!

Whole Wheat Pizza Dough:

  • 1.5 cups warm water (115 degrees) if it is any hotter you will kill the yeast
  • 2 packets active dry yeast (1/4 ounce each)
  • ΒΌ cup olive oil, plus more for bowl
  • 2 tablespoons sugar
  • 2 teaspoons coarse salt
  • 2 cups all-purpose flour (trick- add flour slowly by cup or half cup, weather will vary the dough and amount of flour needed for perfect consistency)
  • 2 cups whole-wheat flour

Place water in a large bowl; sprinkle with yeast. Let stand until foamy, about 5 minutes. Brush another large bowl with oil.

In bowl with yeast, whisk sugar, oil and salt. Stir flours with a wooden spoon until sticky dough forms. Transfer oiled bowl; brush top of dough with oil. Cover bowl with plastic wrap; let stand in a warm spot until dough has doubled in size, about an hour.

Turn dough out onto a well-floured surface. With floured hands, knead until smooth, about 15 seconds; divide into two balls. Roll out dough using a pie roller onto a pampered chief stone pizza pan (only the best for making homemade pizza). Cook at 450 for 15-18 minutes (until toppings are melted and crust is golden.

Every time I make pizza it is always different, feel free to add whatever toppings you have. For this pizza below I did caramelized onions with garlic, chopped spinach, chopped sun-dried tomatoes, Parmesan and goat cheese! Oh de-lish…
